So for the monsoon food cravings during the rainy days, we again have another delicious and easy Indian style chicken recipe from Shanon Dsouza. Let’s Check Chicken Kadhai Recipe
Ingredients List For Chicken Kadhai
- 1.3kg..(after cleaning)
- 2 tbsp ghee and 4 tbsp oil
- 1 tsp Fenugreek seeds
- 4 Kashmiri chillies
- 4 large onions–sliced
- 20 cloves of garlic—smashed n chopped
- 1 1/2 tbsp ginger paste
- 4 large tomatoes–chopped
- 4 tbsp tomato puree
- 2 tsp salt or as per ur taste
- 1/2 tsp Mango powder
- 1/2 tsp Garam masala powder
- 2 tsp red chilli powder
- 2 tsp coriander powder
- 2 tbsp coriander seeds–to roast separately
- 1/2 cup cream
- Coriander leaves
- 1 whole capsicum–cut into thick fingers..(I used half green n half red capsicum)
- 2″ginger–cut into matchsticks
- 5 green chillies–long slices (add a few more if u want it spicy)
- 1 lime
- 4tbsp malt vinegar
Method To Make Chicken Kadhai
- Dry roast the coriander seeds on a pan lightly n pound them to split the seeds
- Heat oil and ghee in a vessel
- Reduce heat and add fenugreek seeds and Kashmiri chillies and stir for a minute
- Add onions and cook on medium heat till they turn light brown
- Add garlic n fry for 2 minutes
- Add tomatoes(add 1 tsp sugar always when adding tomatoes to balance the acidity)
- Cook for 5 minutes
- Add ginger paste and mix around for a minute with a lil water
- Add the smashed up coriander seeds, red chilli, and coriander powder
- Add a lil water n stir
- Add chicken 🐔 n fry it well in the masala for 10 minutes on a high flame stirring well to mix everything.
- Add salt, mango powder and garam masala powder
- Add water as per the amount of gravy u like
- Cover n cook for 25 mins on med to low flame till tender
- Add tomato puree and chopped coriander
- Cook for 2 mins
- Add capsicum, ginger matchsticks, and green chillies and lime juice n mix well

- Reduce heat…add cream
- Mix well for 3 minutes
- Add malt vinegar and give a boil
- Garnish with coriander
- Serve hot
